These maple tempeh tacos were 💯 When I first went vegan, I wasn't a tofu/tempeh kinda person, but then I realized that I just wasn't cooking it correctly! The plain stuff kinda makes me wanna 😷, but crisping it or glazing it with this maple marinade completely changes it for me. Just slice your tempeh and let it sit in a bag for 15 min with 2 TBSP balsamic vinegar, 2 TBSP maple syrup and 1 TBSP +

Spinach, bok choy, avocado, caramelized onion, cucumber, crispy tofu, veg sushi and theeeee best, creamiest turmeric dressing. I just combined hummus, dijon and turmeric. Monday morning pick-me-up 🌞 Blueberry pancakes with pb + maple syrup, plus cherries and more bloobs. Sunday brunching 🌿 Tofu scramble, toast, and a bruised avo that tastes just as good as the pretty kind 🌞 For the scramble, I use extra-firm, drain it and wrap it in a thin towel and put a heavy weight on it (books, a big pot, a medium-sized dog). Claaaaassic combo 😜 When cooking at school, this was my go-to lunch because it's cheap (minus the avo, but avo), and super quick.
